We use 3 different types of dried cod in our production: root cut, stockfish and fillets.

Lye fish made of stockfish:
The fish is gutted and the head cut off before it is hung up outside to dry. The stockfish gives a pale and less firm lye fish, which most lye fish lovers like.
LLye fish made of cod fillets:
This fillet is dried in a drying chamber, giving the lye fish a pale and fairly firm consistency with a mild taste.
Lye fish made of root cut cod:
The fish is cleaved along its back and most of the backbone removed prior to being dried outdoors.
