AmStur (for “American Sturgeon”), a closely held family business based in California, supplies caviar from farm-raised North American white sturgeon that is the equal of the best caviars in the world. AmStur was founded by the Narsavidze family from the small country of Georgia in Eastern Europe, home to more than half a dozen species of sturgeon. The family supplied caviar and other fine foods to dining tables across the region, until the early 1990s.
The family resettled in Northern California, where they soon discovered to their great surprise that the region was home to one of the world’s oldest and largest species of sturgeon, Acipenser transmontanus (white sturgeon), which produced a caviar comparable to the finest caviars from the Black and Caspian Seas.
The Narsavidzes dedicated themselves to cultivating this amazing product, and AmStur was born. The company has risen to international prominence through its championing of North American premium caviar and has earned a deserved reputation as one of the leading caviar suppliers in the world.
With strong “farm-to-table” principles at the heart of all AmStur operations, the company opened its first international distribution facility in the United Arab Emirates (UAE) in February 2015. Research had indicated that the country’s historically high rate of caviar consumption and deep cultural appreciation for the product made it an opportune target market for our premium-quality white sturgeon caviar.
In its operations in Dubai, as elsewhere, AmStur not only holds the requisite local licenses and certifications, but is in full compliance with the strictures of the Convention on International Trade in Endangered Species (CITES), which has banned the exportation of any wild-caught sturgeon caviar.
