The chain was founded by brothers Adam and Samuel Kaye in 1993, and floated on AIM in 1995. The chain was the subject of a "take private in 2004. It is now operated as part of the Gondola Group. Specializing in Sicilian cuisine its name is an abbreviation of Authentic Sicilian Kitchen (although as the chain was founded by the Kaye brothers (now directors of Prezzo), it might also possibly be an abbreviation for Adam and Samuel Kaye
