The first Belgian sturgeon caviar was introduced on the market in December 2001: "Royal Belgian Caviar" made its appearance in the world of black gold.
Meanwhile, the Belgian caviar has become one of the most praised farmed sturgeon caviars. Many caviar lovers and chefs have learned to know and appreciate the quality of "Royal Belgian Caviar".
Besides the varieties "Classic" and "Gold Label", both from the Siberian sturgeon (Acipenser baerii), we are one of the few companies in the aquaculture world to offer the real "Osietra" caviar produced with the eggs of Russian sturgeon (Acipenser gueldenstaedtii). These magical tinted dark olive green to golden yellow eggs with their striking colours and their pronounced pure, somewhat "nutty" flavour are a heavenly experience for every connoisseur..
Because of this property the "Osietra" was one of the main caviar varieties traditionally imported from the Caspian Sea region. Today however, the production of "Osietra" and other caviar varieties derived from wild sturgeon are negligible (only the quotum imposed by CITES can be sold).
As mentioned above, "Royal Belgian Caviar" is made from the eggs of sturgeons that are cultured in our farm and have plenty of time to grow into mature animals. The production of our caviar has therefore become a sustainable process. This means that Aqua Bio controls the entire reproduction cycle, from the fertilisation up to the mature fish, ready for caviar production. Therefore, it is no longer necessary to capture sturgeons in their natural habitat for the production of caviar.
