Dunkeld Trout Hatcheries provides a high-end, sustainable and eco-friendly replacement for ocean caught and farmed fish to satisfy the infinite and ever-expanding market.

We produce frozen, jarred and canned fish products in a new sustainable, healthy and eco-friendly manner. Driven by an innovative, passionate, and experienced team.

DTH makes use of fresh spring mountain water, in a RAS facility with zero water loss per annum, the wastewater and suspended solids are removed using a series of settling ponds and de-watering bags. Wastewater is simply borrowed from the supply, waste is completely purified and returned to the natural system.
It is 100% disease free and, having been raised in natural mountain water, the fish are completely free of any contaminants, thus completely Mercury and Micro-plastics free.

The processing plant and cannery are equally environmentally friendly, with 85% water recirculation and, through a wetland system, providing pure drinking water with a small amount of run-off. By using a wetland system to filtrate the water through a natural process, DTH have reintroduced the natural habitat to various birds, frogs and other fauna & flora, previously destroyed by farming activities.

Upliftment to the local community will has been a fortunate byproduct, followed by supporting businesses and enterprise development driven by the Dunkeld Trout Hatchery.

DTH products looks great, the packaging is upmarket, and the brand is attractive. More important than the aesthetic look, the taste of the product is simply delightfully delicious. Consumers will know that they can enjoy a fantastic product with nothing but healthy benefits. Whilst having a positive impact on the environment.

Although the DTH product range started with a large range of items, it has subsequently been reduced to core items which is in highest demand. The current processing plant has limited production capacity, although expansion is possible, resulting in a focus to the following:

Rooibos
The major selling point is the Rooibos flavour, in addition to the delicious Salmon Trout taste, it brings a sweetness to the fish, which is not added artificially by DTH. Rooibos (Aspalathus linearis), meaning "red bush"; is a broom-like member of the plant family Fabaceae that grows in South Africa's fynbos. The leaves are used to make an herbal tea that is called by the names: rooibos (especially in Southern Africa), bush tea, red tea, or redbush tea (predominantly in Great Britain). The tea has been popular in Southern Africa for generations, and since the 2000s has gained popularity internationally. The tea has an earthy flavour with a hint of sweetness. Said sweetness in highlighted when the chopped and dried leaves are used as a smoking agent. Rooibos tea does not contain caffeine and has low tannin levels compared to black tea or green tea. Rooibos contains polyphenols, including flavanols, flavones, flavanones, dihydrochalcones, aspalathin and nothofagin. Albeit that these have several proven health benefits, as does the absence of caffeine, very little other than the Rooibos flavour is carried to the fish.
The processed / dried leaves and stems are used by DTH as sole smoking agent, making DTH the only Salmon Trout processors using the traditional tea plant, sourced from the West Coast of South Africa, in the smoking process.

Brine and Curing
Competitors use a mix of salt and sugar in their brine, whereas DTH uses salt only and, notably, in the smallest amount to allow perfect smoking, resulting in our products being friendly to Diabetics and with zero sugar content a much healthier alternative. With reference to the nutritional analysis of the DTH Fresh Frozen Cured products, a portion of 100g DTH Smoked Salmon Trout contains a mere 0.068 grams of salt. Market research have shown that all competitors exceed 1.5g per 100g, some measuring as high as 3g per 100g. The obvious health benefit in the reduction of salt content is self-evident.

Skin & Waste
In addition, DTH uses an innovative method to remove the skin, which removes the skin only and none of the flesh. Most importantly the healthy fat, extremely high in Omega 3 stays on the final product and is not removed in the process.
The skin and other offcuts, classified as waste, are used for petfood pellets. Reducing the ecological footprint further.

Olive Oil
The most important product, other than the actual fish, in the jarred and canned product is the Olive Oil. We use a variety of Oil Cultivars and specific press methods, all of which are at the very least a virgin oil, in the various products. The selection of olive cultivar and cultivar blends have been specifically matched to each product and the infusion used. We use sustainably farmed Olive Oil, produced and bottled in South Africa.

Certification
BRC are the British Retail Consortium, the company was founded in 1996 by retailers who wanted to harmonize food safety standards across the supply chain. BRC publish a family of standards referred to as BRC Global Standards and BRC certification is certified compliance with one of these standards. BRC Global Standards are used by over 25,000 certificated suppliers in over 130 countries worldwide.
The standards prescribe quality, safety and operational criteria to ensure that manufacturers fulfil their legal obligations and provide protection for the end consumer. Note that the BRC is not an official regulatory body, but demands higher standards than regulatory bodies and thus compliance to BRC standards results in future regulatory certification.
FDA, the United States Food and Drug Administration (FDA or USFDA) is a federal agency of the Department of Health and Human Services. The FDA is responsible for protecting and promoting public health through the control and supervision of food safety, dietary supplements and much more pertaining to other fields outside the DTH product range. DTH must be FDA certified to be able to export to the United States of America. In addition to the USA, several other countries, including prominent Middle-Eastern companies demand FDA certification to allow imports.
EFSA, the European Food Safety Authority (EFSA) is the agency of the European Union (EU) that provides independent scientific advice and communicates on existing and emerging risks associated with the food chain. The work of EFSA covers all matters with a direct or indirect impact on food and feed safety, including animal health and welfare, plant protection and plant health and nutrition. EFSA supports the European Commission, the European Parliament and EU member states in taking effective and timely risk management decisions that ensure the protection of the health of European consumers and the safety of the food and feed chain. EFSA also communicates to the public in an open and transparent way on all matters within its remit
HACCP, Hazard analysis and critical control points, or HACCP, is a systematic preventive approach to food safety from biological, chemical, physical hazards and more recently radiological hazards in production processes that can cause the finished product to be unsafe and designs measures to reduce these risks to a safe level. In this manner, HACCP attempts to avoid hazards rather than attempting to inspect finished products for the effects of those hazards. The HACCP system is used at all stages of a food chain, from food production and preparation processes including packaging, distribution, etc.
KOSHER CERTIFICATION, the word kosher means proper or acceptable, and it has informally entered the English language with that meaning. But kosher laws have their origin in the Bible and are detailed in the Talmud and the other codes of Jewish traditions. They have been applied through the centuries to ever-changing situations, and these rulings, both ancient and modern kosher certification.

Kosher certification is a process by which a company ensures that their food is kosher, or in other words, fit for consumption by observant Jews. Kosher refers to a religious dietary practice that is rooted in Jewish tradition. Contrary to popular belief, kosher food does not refer to Jewish cuisine. Even Thai food can be kosher if it is prepared in accordance with kosher laws, just as Jewish food can be non-kosher if it is not prepared in accordance with those laws.
Kosher laws are more complicated than they seem, especially now that modern technology has come into play. Take for instance, potato chips, which you’d think would be kosher since they aren’t made from foods forbidden by the Torah. Potato chips can actually be considered non-kosher if they are fried in vegetable oil that was pasteurized and deodorized with equipment that has been used for tallow production.

HALAL CERTIFICATION, the Halal certificate is a document that guarantees that products and services aimed at the Muslim population meet the requirements of Islamic law and therefore are suitable for consumption in both Muslim-majority countries and in Western countries where there are significant population group who practice Islam (France, Germany, United Kingdom, Spain). Halal certification is a process which ensures the features and quality of the products according to the rules established by the Islamic Council that allow the use of the mark Halal. It is mainly applied to meat products and other food products such as milk, canned food and additives. Specifically, for meat products Halal certifies that the animals were slaughtered in a single cut, thoroughly bled, and their meat have not been in contact with animals slaughtered otherwise and, especially, with pork. Products that are Halal certified are often marked with a Halal symbol, or simply the letter M (as the letter K is used to identify kosher products for Jewish population).
NRCS, the NRCS is an entity of the department of Trade and Industry established to administer compulsory specifications and other technical regulations with the view to protect human health, safety, the environment and ensure fair trade in accordance with government policies and guidelines.

Dunkeld Trout Hatcheries provides employment and downstream employment for many the local population of the Dullstroom Village, in Mpumalanga, South Africa. Rural towns, such as Dullstroom, have incredible high rates of unemployment and the contribution made by Dunkled Trout Hatchery to the local economy is of enormous importance.
Further to direct employment, DTH is rolling out a large-scale social investment project to the local community.
