The Traditional Portuguese Cod Fish Curing has to follow the characteristics required for the raw materials used (salt and cod), and the traditional production method that specifically includes the stages of washing, salting, drying and maturation /aging, has the following physical characteristics:
External - First quality whole fish, weighing more than 1,5 kg, skin and muscles fully structured and firm, uniform color between pale yellow and yellow straw;
Internal - The cut, the muscle is consistent evidence of yellow with iridescent luster. The surface presents cutting the septa of connective tissue, separating the muscle bundles (layers) and distinct.
