With a focus on ethics as sturgeon is becoming increasingly rare, Maison Kaviari is making an active effort to protect the species through close work with leading aquaculture farms and by developing a range of farmed caviar worthy of the best wild specimens. We look closely at our choice of breeders and only work with EEC-approved farms, in accordance with the latest sustainability requirements (natural ecosystems and respect for environmental, feed and water quality, and animal welfare standards). Thanks to modern breakthroughs in fish farming, sturgeon breeding techniques and production methods have seen significant improvements. Farmes raised caviar according to these methods closely resembles wild caviar in taste.
