Fishing Company Katsuo -Katsuo fishing starts from February to March in the areas from Miyakojima to Okinawa and from Ogasawara to Aogashima. Then the fishing area moves closer to the Japanese coast along with the Black Current going up north the area reaches the coasts of Tosa, Kishu and Izu.
These Katsuo eat sardine which are fed by plenty of plankton of mixed ocean area, put on fat as a protection against the low temperature of Oyashio Current and grow into ‘Toro-Katsuo (fatty Katsuo).

Freeze immediately after catching
Cool down to minus 60 degrees
Thanks to his effort, the following story became the reality.
Freshness of Katsuo was improved, the higher price was given, differentiation from Katsuo caught by purse and seine fishery and the survival of the pole and line Katsuo fishery.
It is B1-katsuo that makes it possible for the ocean-going pole and line Katsuo fishing boats to continue to exist and now B1-katsuo is adopted by all the boats of this fishery.
